Fundamentals of Baking and Pastry

Do you like to bake pasties and cakes? Answering to your craving for sweet indulgence, this specially designed baking and pastry short course aims to teach beginners the basics of baking and special techniques that will ensure success for any baked treats done. Learn how to bake sensibly, the right way and with so much fun. Baking is regarded as an expression of art, an extension of creativity and as diversion of pleasurable living.

Fundamentals of Baking and Pastry is designed for those who want to learn the pillars behind the chemistry of putting ingredients together to produce a variety of cakes and dessert. The students are guided through the methodologies of baking as they go through exploring the technicalities of the recipes. The first module will cover the essential block in cakes and pastry production such as the mise en place, start‐up, the procedure, make‐up, down to the finish. The class is open for anyone interested to bake, as hobby or as skill enhancement. Be prepared to do éclairs, mousses, and cookies to name a few.

For 4 days, go on a culinary adventure as you learn the principles of baking and pastry making while you take on a variety of pastries, cookies, pies and tarts and cakes that you have always wanted to try. The best part of all, you get to eat or take home the food that you just prepared.

Held every Saturday morning, 9AM to 1PM, this 4 day course is perfect for hobbyist, home makers, students and professionals with busy weekday schedules. Besides being an educational experience it's also a way for you to relax after a long week's work.

Schedule will be as follows:

Day 1 - Cookies and Scones
Day 2 - Pies and Tarts
Day 3 - Cakes
Day 4 - Pastries

Ingredients, handouts, apron, skull cap and kitchenware are already prepared for. All that is required of you to bring are your curious taste buds and your enthusiasm for cooking

About the Instructor

Marie Bonus has been a baker and an artist by heart since her grade school years. Growing up, she has excelled and pursued her passion for both crafts by first finishing off in college with a degree for the Fine Arts and later on took on the challenge of getting her diploma in Pastry Arts from the Institute of Culinary Education in New York City. Her combined passion for both arts has opened a lot of opportunities for her to enhance her expertise under her work experiences at renown restaurants and patisserie shops as Financier Patisserie, David Burke at Bloomingdales and the world class restaurant Nobu, all located in New York City.

Recognizing the needs and wants of each individual's culinary inclination, First Gourmet Academy created several short courses called “Connoisseur 101.” These workshops are ideal for the culinary amateurs who seeks information and hands-on learning from experienced instructors for a specific cuisine within a short time frame.
